Sweet Potato Brownies
Simple, quick, healthy and vegan and totally delicious. If you don't tell about the sweet potato, no one will ever suspect.

- ½ cup all purpose flour
- ¼ cup whole wheat flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 2 Tbsp brown sugar
- 1 cup sweet potato cooked and mashed
- 1 teaspoon vanilla extract
- 2 Tbsp date honey or maple syrup or brown sugar
- ¼ cup apple sauce unsweetened
- 3 Tbsp dark chocolate chips or other kind of your choice
- 2-3 strawberries sliced (optional)°
Preheat oven to 180° C and line a 24x24cm pan with parchment paper.
In a bowl, mix the flours, baking powder, salt and sugar.
Add the sweet potato puree, vanilla extract, date honey and apple sauce and stir to combine.
Add chocolate chips and gently mix just a little.
pour into the prepared pan and flatten a bit. Add slices of strawberries an top if desired.
Bake for 25 minutes.
Keep in the fridge in a closed container for 5 days.
Heat up in the oven 5 minutes on 180 C before eating.
