Ingredients

  • ¾ cup all purpose flour
  • ½ cup whole wheat flour
  • ½ teasp baking soda
  • ½ teasp salt
  • ¼ cup cocoa powder
  • ½ cup brown sugar
  • Tbsp instant coffee powder or grainy
  • ¼ cup vegetable oil neutral flavour
  • 2 Tbsp coconut oil
  • 3 Tbsp apple sauce unsweetened
  • ½ teasp almond extract optional
  • ½ teasp vanilla extract optional

Instructions

  • Preheat oven t 180C and line a baking tray with parchment paper.
  • In a bowl mix the flours with baking soda, cocoa and salt.
  • In another bowl mix the rest of the ingredients.
  • Add the dry mixture into the wet mixture and mix to combine. Do not over mix.
    If desired - add chocolate chips.
  • Create small balls, put on the prepared tray and flatten just a bit using a fork. Bake for 9 minutes.
  • Let cool on a rack and then store in an airtight container.

Notes

If the dough is too sticky to form balls easily - just let it rest for 10 minutes first.
