Preheat oven to 180C / 350F and line a baking tray with parchment paper.
In a bowl, mix the flour, sugar, salt and baking soda.
Make a well in the meddle and add the yoghurt and egg. Mix to combine, do not overmix.
Add the butter and mix to combine.
Pour the batter onto the baking tray and use a spoon to shape it into a rectangle about 22x32 cm.
Add toppings of your choice and bake for about 20 minutes, until dry. Cut into portions using a pizza cutter and enjoy.
Notes
Instead of butter you can use vegetable oil with a neutral flavour, such as canola oil or sunflower oil.If you use coconut oil it will affect the flavour. I personally think it's nice, especially if you add chocolate chips.Some ideas for toppings are: fresh fruit (sliced or diced), dry fruit, chopped nuts, toasted coconut flakes, chocolate chips, etc.If you want to add sweetness, serve with maple syrup, date honey or sugar powder.Keep in the fridge and enjoy the next day - simply put them in the oven for 2-3 minutes and your breakfast is ready.
