
Sweet Potato Brownies – guilt free vegan dessert
Whoever tries this sweet potato brownies can never guess that there is a whole cup of sweet potato in it!
Furthermore, this brownie has NO eggs, NO oil and NO dairy in it, it takes just a few moments to make and is so tasty.
The result is a chocolaty, sweet and fudgey treat that everyone likes. And with only 2 tablespoons of sugar for a whole pan of brownies, this sweet potato brownie is healthy enough to be a treat for kids too.
The sweet potato secret
Although no one will notice them in the flavour, the sweet potatoes in this brownie add some amazing health benefits to this sweet dessert.
They are loaded with beta carotene (which functions as an antioxidant) , vitamin C, vitamin A, potassium, and B vitamins. They are also a rich source of fibre and even contain iron, calcium and selenium! No wonder sweet potatoes are considered a SUPERFOOD! 💪
I add slices of strawberries on top before baking. While the strawberries are optional, I do think they go well with the chocolate and also make the brownies more beautiful, so why not? 🍓🍓🍓
Anyway, if you don’t have fresh strawberries you can use frozen strawberries without a problem, and if you don’t have frozen strawberries either, you can choose a different topping you like or simply leave it plain.

This brownies keep in the fridge (in a closed container) for about 5 days. You can eat them cold straight from the fridge, but I recommend you heat them up for about 5 minutes before you eat, as they are so much nicer warm.
Sweet Potato Brownies
Equipment
- Bowl
- Spoon
- 24 x 24 cm pan
Ingredients
- ½ cup all purpose flour
- ¼ cup whole wheat flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 2 Tbsp brown sugar
- 1 cup sweet potato cooked and mashed
- 1 teaspoon vanilla extract
- 2 Tbsp date honey or maple syrup or brown sugar
- ¼ cup apple sauce unsweetened
- 3 Tbsp dark chocolate chips or other kind of your choice
- 2-3 strawberries sliced (optional)°
Instructions
- Preheat oven to 180° C and line a 24x24cm pan with parchment paper.
- In a bowl, mix the flours, baking powder, salt and sugar.
- Add the sweet potato puree, vanilla extract, date honey and apple sauce and stir to combine.
- Add chocolate chips and gently mix just a little.
- pour into the prepared pan and flatten a bit. Add slices of strawberries an top if desired.
- Bake for 25 minutes.
