Quickest pancakes in the world (without a pan!)

I’m yet to meet a person who doesn’t like pancakes. I mean, EVERYONE likes pancakes, right? Pancakes can be a great option for a tasty breakfast, just like in the movies. But… who are you people who have time to stand in front of the stove and fry pancakes in the morning?! I tried quite a few recipes that promised quick pancakes. They weren’t quick enough for my liking – I wanted to find the quickest pancakes that you can actually realistically have for breakfast.

This is why one day I decided to try it differently and the result was WOW. The kids loved it, the adults loved it, everyone loved it.

So basically I don’t see the point in frying pancakes anymore – just mix a few ingredients in a bowl, send to the oven and you’ll have your pancakes ready before you know it!

These pancakes contain yoghurt and egg, and with some fruit on top they’ll be a great breakfast option. Quick, easy and yummy.

Want The Quickest Pancakes To Be Even Quicker?

Make them the day before! They keep very well in the fridge (in a closed container). In the morning, just put them in the oven for 2-3 minutes and your breakfast is ready!

Don’t Forget The Toppings

Another great thing about these pancakes, besides them being so quick to make, is that you can play with the toppings and make completely different pancakes every time.

Slices of fresh fruit are always a great option and will also make your meal healthier – apples, peaches, plums, apricots or pears are great choices, as well as any sort of berries. Dry fruit or chopped nuts (or both) also work well here, and if you want to go with a sweeter option then you can’t go wrong with chocolate chips.

If you like coconut, try using coconut oil (in liquid form) instead of the butter. It gives a gentle coconut flavour to the pancakes and goes well with chocolate chips and toasted coconut flakes.

Whichever toppings you choose, you’re going to have a yummy breakfast. Go on, preheat the oven. Thank me later. 😎

Equipment

Ingredients

  • 1/2 cup all purpose flour
  • 1/2 Tablespoon brown sugar
  • 1/8 teaspoon salt
  • 1/4 teaspoon baking soda
  • 100 ml yoghurt
  • 1 egg
  • 1 Tablespoon butter melted

Instructions

  • Preheat oven to 180C / 350F and line a baking tray with parchment paper.
  • In a bowl, mix the flour, sugar, salt and baking soda.
  • Make a well in the meddle and add the yoghurt and egg. Mix to combine, do not overmix.
  • Add the butter and mix to combine.
  • Pour the batter onto the baking tray and use a spoon to shape it into a rectangle about 22×32 cm.
  • Add toppings of your choice and bake for about 20 minutes, until dry. Cut into portions using a pizza cutter and enjoy.

Notes

Instead of butter you can use vegetable oil with a neutral flavour, such as canola oil or sunflower oil.
If you use coconut oil it will affect the flavour. I personally think it’s nice, especially if you add chocolate chips.
Some ideas for toppings are: fresh fruit (sliced or diced), dry fruit, chopped nuts, toasted coconut flakes, chocolate chips, etc.
If you want to add sweetness, serve with maple syrup, date honey or sugar powder.
Keep in the fridge and enjoy the next day – simply put them in the oven for 2-3 minutes and your breakfast is ready.
