The Perfect Chocolate Coffee Cookies. Hint: It’s Quick And Vegan!
Dairy free and egg free, these chocolate coffee cookies are super tasty, with soft texture, something between fudge and a cake. 😋
Make them plain, with chocolate chips, with peanut butter drops… whatever you do – they are ALWAYS a hit.
While there are so many kinds of chocolate chips, you should know that some of them are actually NOT CHOCOLATE at all. And by that I mean they don’t contain the ingredients chocolates contain but are more of a sugar and oil mixture which is.. not good for you.
If you want to go with a more healthier (and also much tastier!) option, then always choose good quality dark chocolate chips, something like these for example. The higher cocoa percentage the better, as a general rule. But I would say don’t go over 75% for cookies as you want your dark chocolate to still be sweet. (it’s supposed to be a cookie, don’t forget!)
The best part? (apart from being delicious, of course) is that they are soooo quick to make and don’t contain any special ingredients. If you enter the kitchen now, in 20 minutes you’ll already have chocolate coffee cookies cooling on the rack. Yay!

Chocolate Coffee Cookies

- Baking tray
- Baking sheet
- 2x Mixing bowls
- Spoon
Ingredients
- ¾ cup all purpose flour
- ½ cup whole wheat flour
- ½ teasp baking soda
- ½ teasp salt
- ¼ cup cocoa powder
- ½ cup brown sugar
- 1½ Tbsp instant coffee powder or grainy
- ¼ cup vegetable oil neutral flavour
- 2 Tbsp coconut oil
- 3 Tbsp apple sauce unsweetened
- ½ teasp almond extract optional
- ½ teasp vanilla extract optional
Instructions
- Preheat oven t 180C and line a baking tray with parchment paper.
- In a bowl mix the flours with baking soda, cocoa and salt.
- In another bowl mix the rest of the ingredients.
- Add the dry mixture into the wet mixture and mix to combine. Do not over mix.If desired – add chocolate chips.
- Create small balls, put on the prepared tray and flatten just a bit using a fork. Bake for 9 minutes.
- Let cool on a rack and then store in an airtight container.
