Spiral Rye Cookies – the (healthier) cookie you will love!

I made these spiral rye cookies quite a few times already, in different versions. Filled with date spread, apricot jam, strawberry jam, even quince jam and coconut! They ALWAYS came out great.

There are a few things I love about these rye cookies:

  • There is no added sugar in them!
  • They are vegan and overall actually pretty healthy, which makes them a great choice for cookies you can give to your kids too.
  • When I say no sugar I don’t mean you need some other sweetener either! The only sweet thing in the dough is one single tablespoon of date honey, and if you don’t have date honey (seriously?? 🤔) you can easily substitute for any other honey or maple syrup. And then go get date honey straight away, you need it in your life. Really.
  • They are made with rye flour which is a very healthy option. It contains more fiber and nutrients such as B vitamins. If you are interested, you can read more about the benefits of rye flour and even look at studies’ results that shows all of these amazing benefits here
  • The dough is just awe-some! It comes together in a moment and is super soft and nice that you feel like playing with it instead of baking it.

Feel free to play with the filling. Any spread or jam will work here. You can also add chocolate chips or raisins (to the paste of your choice, not instead of it), just don’t go for something too wet and you’ll be fine.

These rye cookies are not too sweet. Personally I think it has the right amount of sweetness but if you like your cookies sweeter, no problem at – just dust them with powdered sugar after they cool down. Easy.

Ingredients

  • 1 cup whole rye flour
  • 1 cup all purpose flour or spelt flour
  • 1 Tbsp baking powder
  • teaspoon salt
  • ½ teasp cinnamon ground
  • cup coconut oil or vegetable oil
  • 1 Tbsp raw tahini
  • 1 Tbsp date honey
  • 1 Tbsp vinegar
  • ½ tsp vanilla extract optional
  • ½ cup water warm
  • ½ cup filling of your choice

Instructions

  • Preheat oven to 180C / 350F and line a baking tray with parchment paper.
  • In a bowl, mix together all the dry ingredients. Add the rest of the ingredients and mix to form a soft ball of dough.
  • Divide in two and roll out each portion into a rectangle, about 22x35cm. Spread filling on top, leaving about 2cm on one side without filling.
  • Roll into a log, starting from the side with the filling and finishing with the plain part.
  • Cut the log into 12 pieces and put on the tray.
  • Bake for about 12 minutes.

Notes

Use your favourite jam, nut butters or any sweet spread as a filling.
Keep in an airtight container for up to 5 days.
Calories don’t include the filling.
